Ingredients
Method
- Wilt the spinach and grated courgette, then mix with the feta.
- Fill the filo sheets and roll them up.
- Arrange in a dish and brush with beaten egg.
- Bake for 30 minutes at 180 °C.
Nutritional benefits
Filo pastry is thin and much lower in fat than puff pastry, especially when baked with little oil. The spinach and feta filling provides iron, calcium and protein. A crisp, sociable Turkish dish, lighter than many pastries, best served with a salad.
Variations and substitutions
- Use potatoes or leeks.
- Fill with minced meat (the traditional version).
- Shape into a spiral (rolled börek).
- Use fromage blanc or cottage cheese instead of feta.
Storage and preparing ahead
Keep for 3 days and reheat in the oven to restore the crispness.
💡 Good to know
Brush the filo with a little oil or egg: that is enough to brown it without drowning the pastry in fat.
