Vanilla chia pudding
Nutrition per serving
Chia pudding is the no-cook healthy breakfast you make the night before: the chia seeds swell in plant-based milk and form a creamy, filling pudding. Rich in fibre, plant omega-3 and protein, it can be customised with seasonal fruit. Practical, pretty in a jar and ready to take away.

Ingredients
- 6 tbsp chia seeds
- 400 ml plant-based drink (almond, coconut)
- 1 tsp vanilla
- 1 handful of red berries
- 1 tsp maple syrup
Method
- Mix the chia seeds, plant-based drink, vanilla and maple syrup in a jar.
- Stir well, wait 5 minutes, then stir again (to prevent lumps).
- Place in the fridge overnight (at least 4 hours) while the seeds swell.
- When ready to serve, top with the red berries.
Nutritional benefits
Chia seeds are an accessible superfood: exceptionally rich in soluble fibre (hence the pudding effect and the fullness), they also provide plant omega-3 (ALA), plant protein, calcium and magnesium. Made with a plant-based drink, this pudding is naturally lactose-free and gluten-free. Its richness in fibre and healthy fats makes it a filling, low-GI breakfast, and an interesting option during pregnancy (source of calcium and omega-3).
Variations and substitutions
- Chocolate: add 1 tbsp unsweetened cocoa.
- Fruity: mango, banana, kiwi or stewed fruit at the bottom of the jar.
- Higher in protein: a scoop of protein powder or a spoonful of Greek yoghurt.
- Made with cow’s milk if you do not need the lactose-free version.
Storage and making ahead
Chia pudding keeps for 3 to 4 days in the fridge: make several jars at once for ready-made breakfasts all week. Add the fresh fruit at the last moment.
💡 Good to know
The right ratio is about 3 tablespoons of seeds to 200 ml of liquid. If the pudding is too thick, thin it with a little plant-based drink; if it is too runny, add more seeds and wait.
