Nutritional benefits
Wholewheat couscous and chickpeas together provide complementary plant proteins and plenty of fibre, for a filling and energising dish. The abundance of vegetables brings vitamins, minerals and antioxidants. Budget-friendly and plant-based, it is a complete, balanced family meal.
Variations and substitutions
- Gluten-free: replace the couscous with quinoa.
- Higher in protein: add chicken or poultry merguez sausages.
- With raisins for a touch of sweetness.
- Broth spiced up with harissa.
Storage and making ahead
The vegetables and couscous keep for 3 days if stored separately. The broth freezes well. Ideal for batch cooking.
💡 Good to know
Serve the broth separately so everyone can adjust it: the couscous stays light and doesn’t soak up too much liquid too soon.
