Ingredients

Method

  1. Preheat the oven to 180 °C. Mix the chickpea flour, oil, water, cumin and salt until you have a dough.
  2. Roll the dough out thinly between two sheets of baking paper.
  3. Cut into squares and sprinkle with sesame seeds.
  4. Bake for 12 to 15 minutes, until the crackers are golden and crisp. Leave to cool.

Nutritional benefits

Chickpea flour makes these crackers a savoury snack far more nourishing than classic party biscuits: rich in plant protein and fibre, it fills you up and limits snacking, while being naturally gluten-free. Baked with a small amount of olive oil, they avoid the poor-quality fats and excess salt of processed products. Perfect with hummus or a vegetable spread for a complete snack.

Variations and substitutions

  • With herbs: rosemary, thyme, oregano.
  • Spiced: smoked paprika, curry powder or chilli.
  • With seeds: flax, pumpkin, sunflower, poppy.
  • With Parmesan for a more indulgent version (not lactose-free).

Storage and making ahead

These crackers keep for 1 to 2 weeks in an airtight tin and stay crisp if they are completely dry before storing. Perfect to make ahead for healthy nibbles and snacks.

💡 Good to know
