Nutritional benefits

Mussels are rich in protein, iron and vitamin B12 for very few calories and little fat, which is good for cholesterol. Oven-baked chips instead of fried ones make the dish much lighter. A sociable classic made far healthier, without giving up the pleasure.

Variations and substitutions

  • Mussels with curry or lightened cream.
  • With sweet potato chips.
  • With herbs: thyme, garlic.
  • With a green salad.

Storage and making ahead

Eat the chips straight away; throw away any mussels that stay closed after cooking.

💡 Good to know

Spread the chips out on the tray so they do not touch: that is what lets them brown and crisp up without deep-frying.
