Ingredients

Method

  1. Mash the bananas to a purée.
  2. Mix with the oats, walnuts, raisins and cinnamon.
  3. Press into a tin.
  4. Bake for 20 minutes at 180 °C, leave to cool and cut into bars.

Nutritional benefits

The ripe banana sweetens these bars naturally, so no sugar is added. The oats provide fibre and slow-release carbohydrate, the walnuts healthy fats. A filling, healthy homemade snack, perfect before or after exercise and far better than shop-bought bars.

Variations and substitutions

  • With dark chocolate chips.
  • With peanut butter.
  • With mixed dried fruit: apricots, cranberries.
  • With seeds: sunflower, pumpkin, chia.

Storage and make-ahead

Keep for 5 days in an airtight tin; they also freeze well. Perfect as an on-the-go snack.

💡 Good to know

Use very ripe (spotted) bananas: they are sweeter and bind the bars better when there is no added sugar.
