Ingredients
- 300 g of frozen mixed berries
- 200 g of Greek yoghurt
- 1 tbsp honey
- mint
Method
- Put the frozen berries and yoghurt in a blender.
- Add the honey.
- Blend until you have a creamy, ice-cream texture.
- Serve straight away with a little mint.
Nutritional benefits
Greek yoghurt provides protein and calcium for few calories, and the berries add antioxidants and natural sweetness. Blended together, they make a creamy ice cream without an ice cream maker, and without cream or excess sugar. The healthy frozen dessert par excellence, high in protein and light.
Variations and substitutions
- With frozen mango or banana.
- Vegan: use plant-based yoghurt.
- Higher in protein: use skyr or a scoop of protein powder.
- Without honey for a version with no added sugar.
Storage and making ahead
Best eaten straight away for the creamy texture; it hardens in the freezer (take it out 10 minutes beforehand).
💡 Good to know
Use well-frozen fruit and cold yoghurt: that is what gives the instant ice-cream texture, with no ice cream maker.
