Ingredients

Method

  1. Cut the chicken into cubes and thread onto skewers.
  2. Make the sauce: soy, mirin and ginger, reduced in a saucepan.
  3. Grill the skewers, brushing them with the sauce.
  4. Sprinkle with spring onions and sesame.

Nutritional benefits

Chicken provides plenty of lean protein for few calories, ideal for weight loss. The yakitori sauce glazes the skewers with very little fat. A tasty, light Japanese dish, to serve with rice and vegetables for a balanced meal. Naturally lactose-free.

Variations and substitutions

  • With chicken thighs (more tender).
  • With vegetables threaded between (leek, mushrooms).
  • With tofu for a vegetarian version.
  • Spiced with togarashi chilli.

Storage and making ahead

Keep for 2 days and reheat well. Ideal for lunchboxes.

💡 Good to know

Reduce the sauce in a saucepan before glazing: it turns syrupy and coats the skewers perfectly.
