Ingredients

Method

  1. Preheat the oven to 180°C (160°C fan). Mash the banana and mix with the egg and almond butter.
  2. Add the oats, raisins and cinnamon.
  3. Shape into small flattened mounds on a baking tray.
  4. Bake for 10 to 12 minutes, until the edges are golden. Leave to cool.

Nutritional benefits

These cookies rely on oats (fibre, complex carbohydrate) and banana (natural sugar, potassium) rather than refined sugar and butter. The almond butter replaces the fat with healthy fats and a little protein, and the raisins add concentrated sweetness and iron. The result is a filling snack with lasting energy, ideal for children’s after-school snacks or a bite before exercise, and much healthier than shop-bought biscuits.

Variations and substitutions

  • With chocolate chips or cranberries instead of the raisins.
  • Gluten-free: use certified gluten-free oats.
  • Higher in protein: add a scoop of protein powder.
  • With nuts: add chopped walnuts or hazelnuts.

Storage and making ahead

These cookies keep for 4 to 5 days in an airtight tin and can be frozen. One batch at the weekend means homemade snacks all week, with no additives or hidden sugars.

💡 Good to know

The banana and almond butter are enough to bind and sweeten the dough, so there is no need to add sugar. Take the cookies out while they are still soft; they firm up as they cool.
